What Is Menu Engineering?

You need accurate food cost per dish, not estimates. That means knowing your current ingredient prices — which shift constantly with invoices. Pull 90 days of sales mix from your POS, calculate the true contribution margin for each item at today's ingredient costs, and rank by order count.

Review this at least quarterly, or whenever a key ingredient spikes in price.

  • Anchor high-margin items in the upper-right of each menu section — where eyes land first.
  • Remove dollar signs from prices; research consistently shows it reduces price sensitivity.
  • Use descriptive language for Stars and Puzzles to increase perceived value.
  • Limit section size to 5–7 items; more choices slow decisions and dilute attention from your best items.
  • Flag margin winners with a subtle callout (chef's pick, house favorite) rather than a discount badge.
