Food Cost Calculator: Formula, Examples & How to Track It Automatically

What Is Food Cost Percentage?

Food cost percentage tells you how much of every dollar in food revenue is consumed by ingredient costs. It is one of the clearest signals of whether your menu is priced correctly and whether waste or theft is quietly eroding your margins.

Formula:

> Food Cost % = (Cost of Goods Sold ÷ Food Revenue) × 100

Where Cost of Goods Sold (COGS) = Beginning Inventory + Purchases − Ending Inventory.

Most full-service restaurants target a food cost percentage between 28% and 35%, though the right number depends on your concept, price point, and labor model.

Worked Example

Suppose your kitchen starts the week with $4,200 in inventory, receives $6,800 in deliveries, and ends with $3,600 on the shelves. Your food revenue for the week is $28,000.

  • COGS = $4,200 + $6,800 − $3,600 = $7,400
  • Food Cost % = ($7,400 ÷ $28,000) × 100 = 26.4%

A result under your target is healthy. A result creeping above it signals over-ordering, waste, portion drift, or theft — and the sooner you catch it, the less margin you lose.

Why This Metric Moves the Needle

A single percentage point on a $1M food-revenue operation equals $10,000 per year. Most operators who track food cost manually — via spreadsheets updated weekly or monthly — are always looking backward. By the time the number is wrong, the damage is done.

How Hubstaurant Automates Food Cost Tracking

Hubstaurant reads your vendor invoices automatically, updating the cost per ingredient every time a delivery is logged. That means your COGS figure is always current — not reconstructed at month-end.

The food-cost analytics dashboard links ingredient costs directly to your POS sales data, so you can see food cost percentage by menu item, by day-part, or across your entire operation without touching a spreadsheet. When a supplier raises the price of a key ingredient, Hubstaurant flags which menu items are now underpriced.

Standalone inventory apps like MarketMan or BlueCart do ingredient-level costing well. Where Hubstaurant adds value is connecting that cost data to your scheduling, vendor purchasing, and POS analytics inside a single system — so you are not manually reconciling numbers between four different tools.
